Healthy Meals Cookbook



Yes, it's time for another cookbook review! You can probably find Healthy Meals for One (or Two) at your local library. (I found my copy there!) This paperback from the editors of Women's Health magazine is stuffed with quick and easy recipes that feature nutritious ingredients. Calorie and macro-nutrient counts are listed for each dish. Perfect for a single person on a weight loss program!

Although this cookbook doesn't have nearly enough photographs (just one small section in the center) I am still a fan. The recipes sound so good, I can imagine cooking and tasting them even without the visual aids.

There are the typical sections for breakfast foods, smoothies, sandwiches, dinners, and desserts. In addition, each recipe fits into a category of "Prep It Ahead," "Take Your Time", or "Throw It Together." You can probably guess what each of these entails: recipes with some advance preparation needed, others that demand a longer cooking time, and some that you can simply throw together at the last minute.

Here are some examples:

Light and Lemony Chicken Salad starts with a grilled chicken breast. This must be prepped ahead of time, cooked, and then sliced for the salad.

Tuna Burger with Miso Mayo is a "Throw It Together" recipe that uses canned tuna and pantry products you might have on hand. No prep needed.

Spicy Chipotle Peach Ribs take about 40 minutes to cook on the grill. This is a "Take Your Time" dish.

I plan to try the Blueberry Turkey burgers, made with wild blueberries. Dijon mustard and garlic are also added to the meat before cooking. Gruyere cheese and caramelized shallots go on top. Are you drooling yet?

No? How about Spicy Peanut Butter Cookies, made with a touch of chili powder in the dough, along with dark chocolate chips? I know you want to try these!
