I promised you a recipe from The Four Hour Chef by Timothy Ferriss, and here it is. As I mentioned in my earlier review, all of the recipes in this book are very simple, pared down to just a few key ingredients, and perfect for people who are busy. Even if you hate to cook, you will discover something you can stand to make here! Everything is that easy.
This particular recipe is a great substitute for mashed potatoes. If you are on Atkins, the Zone, the Slow Carb diet, or a Paleo-style eating plan, then this is perfect for you. Of course, mashed cauliflower will not taste exactly the same as mashed potatoes, but this dish will be delicious enough to satisfy your appetite for comfort food. All the while, being so healthy and nutritious!
Ingredients:
1 head of cauliflower, about 3 cups florets
3/4 cup coconut milk
1/4 cup cashews
1/4 teaspoon curry powder
salt, to taste
In a large sauce pan, place cauliflower florets, coconut milk, cashews. Bring pot to a boil then turn down to a simmer and continue cooking (covered) for about 20 minutes. Remove from heat. Sprinkle in curry powder and about a 1/4 teaspoon sea salt or to taste. Use a fork to mash cauliflower. Taste and adjust seasonings. OPTIONAL: add a tiny pinch of cinnamon.
