Miracle Noodles



You know how much I hate wasting food, so I couldn't let those packages of Miracle Noodles sit there in the cabinet until they expire. Remember I had to throw away a giant bag of expired quinoa, and just this week I tossed several pounds of forbidden black rice. If you have whole grains sitting around in your pantry, keep in mind that they contain oils in the germ and those oils will go rancid. Brown rice only lasts about 6-8 months at room temperature!!! How could I not know this until now?



Anyway, I tasted the Miracle Noodles a few months ago when my daughter first bought them. Meh. They are a miracle because they are so low in calories. One serving has literally zero calories, less than one single gram of carbs, and basically nothing else. Made from the root of a plant called konnyaku imo, they contain only soluble fiber and water, take 2 minutes to cook, and taste like absolutely nothing. Therefore, you need to add lots of flavor with the sauces and accompaniments in order to make this product edible.



These noodles will work in Pad Thai, sesame noodles, cold noodle salads, etc.



I decided to use homemade pesto, with plenty of garlic, plus kalamata olives and feta cheese, for an extra boost of salt and flavor. The finished dish was half salad, half pasta, and totally yummy.

Ingredients:

1 package Miracle Noodles cooked as directed
2 TB pesto sauce (Homemade if possible!)
1 handful baby spinach leaves
3 oz. shredded roasted chicken
5-6 kalamata olives
6-8 grape tomatoes
feta cheese (to taste) (or parmesan)
salt and pepper to taste

Toss all ingredients together in a bowl. Season with salt and pepper to taste. Makes one serving. Enjoy!
