After I posted my last recipe for Cauliflower "Rice" Pilaf, a friend mentioned that Trader Joe's now carries Cauliflower Gnocchi. On our next trip there, I snagged a bag.
You can find this pre-made product in the Frozen Food section. A bag goes for $2.69 and contains 2.5 servings. Serving size is only one cup, which is pretty small for a meal, but the calories are so low--about 140 in a cup--that you can probably afford to chow down.
Although this gnocchi is made with about 75% cauliflower, it does also contain cassava flour as the second ingredient. There are about 22 grams of carbs in a serving. This fits in well with the Zone diet, but is pretty high for anyone doing Keto.
Another fantastic fact about this gnocchi is that it's so easy to prepare. You just throw it in a skillet with a little water, put the lid on, and simmer for 6-8 minutes. Add a bit of oil or butter, brown lightly, and you are done.
I served the gnocchi with roasted chicken (for protein) as well as kale, pesto, and cherry tomatoes. This recipe serves one single person.
Ingredients:
1 serving (1 cup) frozen cauliflower gnocchi
1-2 TB olive oil
3 ounces sliced roast chicken (cooked)
1 small bunch fresh kale leaves
1-2 TB pesto sauce (I used homemade but you can also purchase this!)
5-6 cherry tomatoes
Parmesan cheese
In a large, covered skillet, simmer the frozen gnocchi with 1/4 cup water for about 6-8 minutes. Add the olive oil, chicken, and kale leaves and continue to cook, stirring frequently, until kale is wilted, chicken is warm, and gnocchi is lightly browned. Add pesto sauce and toss until everything is coated. Top with parmesan and tomatoes. Serve immediately or sooner. Makes one serving.
