Another recipe brought to you by Aldi!
Yes, all the ingredients in this super quick and easy recipe were purchased at Aldi. You can probably find similar stuff at your local grocery store. Trader Joe's also carries both the eggplant cutlets and chicken burgers. This particular chicken burger contains feta cheese, red and green peppers, and Italian seasoning.
You can throw this recipe together in no time at all. The results are delicious and filling. Substitute a turkey or beef burger, if you like, or skip the meat and go for a vegetarian stack. The possibilities are endless!
Ingredients:
2 TB coconut or olive oil
3 frozen eggplant cutlets (breaded and precooked)
1 Mediterranean chicken burger (or burger of your choice!)
1-2 slices of provolone cheese (or mozzarella)
1/2 cup marinara sauce
2 TB Parmesan cheese
In a heavy skillet, melt coconut oil over medium heat. Add 3 frozen eggplant cutlets and brown on both sides until heat through. Place cheese slices on top of eggplant. Cover pan and allow cheese to melt for about a minute. Remove eggplant and stack on a plate. Keep eggplant warm.
Add some oil to the pan and cook the chicken burger on both sides until lightly browned and cooked through. While burger is cooking, also warm the marinara sauce in small pan or microwave.
When burger is cooked, place on plate and stack eggplant cutlets on top. Cover with marinara and top with Parmesan cheese. Serve immediately or sooner. Makes one single serving. Add steamed broccoli or salad on the side, if you wish.
